Rhodopean Cuisine |

One of the
irresistible temptations of the Rhodopes is the wonderful cuisine.
Known for their hospitality, Rhodopeans will welcome you to their
homes as dearest guests and will serve you delicious specialties.
Many of the recipes have come down to us through the ages carefully
preserved in the years and enriched by modern generations. The Katmi
or Morudnitsi are one of the favorite local specialties, prepared
from thin batter, yogurt and eggs.
Another popular dish is the ''kachamak''. Boiled corn ''kachamak''
is served in two ways: in ''balls'' or in a large baking tin, with
melted butter poured and fried meat/bacon, cheese or curds on top.

One must try the favorite dish of Rhodopeans - ''patatnik''. It
is made of grated potatoes, eggs, onions and spices, and is baked
in a frying pan.
During Long Lent, Advent, and the Petrovski and Bogorodichni Fasting
in the past, people used to consume vegetarian dishes.
Sheep-breeding families in the past used to produce the so called
''brano'' milk which was made by draining the whey from a curdled
sheep's yogurt and sealing the remainder in a wooden barrel with
butter. If you are staying in a private lodging, your hosts can
provide for you home made food. The restaurants in the area are
filled with hospital locals, good food and great atmosphere. The
taverns are a great place to go with your friends and are intimate
enough for a romantic dinner for two.

Oil one
round small Casserole pan. Rolls the dough into 2 thin round flat
pieces (1mm). Make one smaller than the other. Place larger dough
in pan. (Some of the dough should overlap the pan by 2cm all around).
Place filling and pull excess dough over the top to enclose the
filling. Place smaller dough on top to completely encase the filling.
Cook on med. heat for 20 min, slowly adding small amounts of butter
from the sides of the Klin. Carefully flip over the Klin and continue
to cook for 20 min adding butter . |

1 Tblsp Vinegar,
1 Tblsp Oil, 150gr Water, Flour, 250gr Butter, 5 Eggs, Cheese, Cooked
rice |
